Pancake day might be one of our favourite days of the year so we’re making sure we’ve got plenty of time to perfect our vegan pancake recipe before the big day (1st March!)…
We’ll find any excuse to eat pancakes galore!😋 Here's some vegan pancake porn!
- 250g plain flour
- 1 1/2 teaspoons of baking powder
- 350ml dairy free milk
- 1 mashed banana
In a mixing bowl combine plain flour, baking powder, dairy free milk and mashed banana. Whisk until there are no lumps.
Leave the pancake mix to sit for 10 minutes to allow for extra fluffiness.
In a large saucepan on a medium heat, add a generous drizzle of oil of choice. Next, add approximately 2/12 tablespoons of mixture per pancake to the pan. You should be able to cook 2 at a time. Allow space in between each.
After a couple of minutes and once bubbles have appeared, flip over and cook on the other side for the same amount of time.
Keep the pancakes in a hot oven until all of them are made.
Top with toppings of your choice!
