We’re here to make sure that every meal is filled with some Christmas magic this year, so here’s our gingerbread granola recipe…✨
Did you know that a lot of store bought gingerbread is actually plant based?! (but be sure to always check the label before purchasing incase there’s any added ingredients) meaning you can add some cute lil gingerbread men to our brekky recipe with ease!
60g dried cranberries
60g pumpkin seeds
70g chopped pecans
60g chopped almonds
3 tablespoons Maple syrup
80ml Coconut oil (melted)
2 teaspoons molasses
1 teaspoon Vanilla extract
1 teaspoon Ground cinnamon
1/2 teaspoon Ground ginger
1/4 teaspoon nutmeg
1/4 teaspoon ground cloves
Preheat oven to 180c
In a large bowl combine the oats, dried cranberries, pumpkin seeds, chopped pecans and almonds.
In a separate bowl combine the maple syrup, coconut oil, molasses, vanilla extract, ground cinnamon, ground ginger, nutmeg and ground cloves.
Pour the dry ingredients into the wet and combine.
Scatter the mixture onto a baking tray lined with a silicone baking mat and place in the oven for 15 minutes.
Give the granola a shake/stir and place back in for a further 10 minutes.
Store in an airtight container and serve with milk and optional mini gingerbread men should you wish. Enjoy!
