S’mores Style Rocky Road
To celebrate S'mores day, here is a delicious recipe for S’mores Style Rocky Road using our Reusable Baking mat!
350g dark chocolate (broken into chunks)
250g dairy free butter
250g vegan digestive biscuits
200g vegan marshmallows
Begin by preheating the oven to 180c. Place your Sasstainable reusable baking mat in a baking tray that is a few cm’s smaller than the mat, so you’ll be able to lift the rocky road out easily once set.
In a pan on a low heat add the chocolate and butter and allow to melt whilst stirring it.
Next put 4 digestives, a handful of pecans and a handful of marshmallows to one side. In a large bowl break the rest of the digestives and pecans up roughly with your hands.
If using mini marshmallows add the remaining ones to the bowl. If using large cut in half and add to the bowl.
Now once the chocolate and butter have completely melted and are smooth empty the mixture into the large bowl. Combine quickly to ensure that the marshmallows don’t start to melt too much.
Empty the mixture into the lined tray and flatten into the corners. Push the remaining marshmallows, broken digestive and pecan pieces into the top and then place the tray into the oven for 5-10 minutes until the marshmallows have melted.
Take out of the oven and allow to cool for 10 minutes before placing into the fridge to set for a minimum of 90 minutes. Slice and enjoy!
